Make the sauce:
- 1.5 cups olive oil
- juice of 2 lemons
- salt and pepper
- minced garlic
Cut the artichokes in half. Steam in a pot with an inch of water on the bottom for 15 minutes. They should end up pretty tender, but not quite done.
Take them out of the pot and brush them with the oil mixture.
Place on the BBQ and grill it for about 12 minutes.
Serve with the sauce for dipping.
I don’t cut the fuzzy middle part out before cooking. After they’re cooked it’s really soft so easy to scoop out before eating.
