Protein Bars, adapted from a recipe I got off a peanut butter jar. Delicious and perfect for a pre-run snack. Quick and easy to make.
1 cup peanut butter, I used crunchy because I like the crunch
1/4 cup honey
6 tablespoons water
1 cup chocolate whey protein powder drink mix
3 cups quick oats, uncooked.
1/2 cup dried fruit, I used raisins and cranberries but anything would work
1/2 cup chocolate chips
Line an 8×8 baking pan with foil, make sure the foil comes all the way up and over the sides of the pan.
Put the peanut butter and honey in a bowl and microwave until hot and melted, 30 seconds at a time, stirring in between. It took me about a minute and a half. Depends on your microwave. Then add the chocolate chips and microwave 15-30 seconds more. Enough to melt the chips half way so you can mix them in, but still have some chunks.
In a separate bowl, mix the protein powder with the water. This is weird because it doesn’t seem like it’s enough water. It will be super powdery most of the time, but keep stirring. It will eventually mix together.
Then mix together the peanut butter mixture and the protein powder mixture. Mix well.
Then add the oatmeal and dried fruit. Mix really well.
Press the mixture into the pan. Press it firm and flat.
Place in the refrigerator at least 1 hour. I left mine about 2 hours.
Then un-do the foil and you will have a giant square of protein bar. Cut into small pieces.
I kept the cut pieces in the refrigerator the whole time too.
